I am planning on making sleeved cable extensions. I have sleeved psu cables before but going a easier route by using CableMod ModFlex Sleeved Wires. I will need to make some for GPUs, 24 ATX and 8Pin EPS. They come in 8", 16" and 24" lengths. I have a Seasonic M12 II EVO 850W PSU and a Fractal Design Arc Midi R2. What lengths will be enough?

Just extensions? 8 inches will be more than enough for all but the GPU. It will depend how you want to route the cables, but I'd get the 16's for the GPU just to make sure.

I would measure according to the length needed and added to the PSU, usually ones like EPS,, and 24 pin don't need to be too long compared to PCI-E cables and peripherals like sata or molex.

Why not sleeve the entire PSU cable though since it's a modular PSU.

Well I don't want to void my 5 year warranty because I just got it this past fall.
