Should I make the switch?

I'd wait a gen or two before upgrading. You still have a beast of a cpu

I am currently rocking an Asus x79 Deluxe with was a factory refurbished board from an RMA which came with the second PCI slot not working but I was went with it. My processor is an Intel i7 3820, I am considering taking the plunge and upgrading to either x99 or z170 but not exactly sure which one I should go for. I do a bit of video editing but mostly gaming and I am just looking for a solid, overcloackable processor to really top off my computer as it is the only remaining component of the original system. Also, if I should just stick with my current processor and wait for any new stuff coming in the future. Thanks in advance everyone.

You should go with Z170 and a 6700k

I would want to go for X99, seems much better than X170 atm with having to switch to Windows 10 in 18 months, bent CPUs and BIOS update for freezing on Skylake.
