My question is can you install CPU coolers after the mother board is in the case? Because I bought a cooler master hyper 212 Evo without realizing it doesn't support LGA 1151, so can I continue my build and go back to the store, pick up another and just switch it out from a stock cooler another day?

you can. 212 EVO supports 1151. Not sure why you have issues

The mounting for LGA 1151 has the same cooler mounting as LGA 1155/6/0, and motherboard trays usually have a cutout to reveal the back of the motherboard, so it should be okay.

1151 uses the same pattern as 1150 and even 1155 or 1156. You should have no issues.
