Is this even possible?

I have wanted to build a nas or sever. but have never found enough reasons to actually do it. but lately i have been thinking what if i could have a nas, plex server and a softphone running off the same server. Since these things are required to be on continuously on they would work nicely together. But in my mind i cant seem to get it all to work.  At the moment i have windows server for plex and if  switch it to a nas server and run plex off that it could work but then where would the softphone go? Also i have programs that require me to use windows but thats a bit off topic.  if i could run a nas, plex and softphone off windows i would be golden! any suggestions on how this would work?

 

im also looking at building a Nas for backup considering I have 4TB of content that i have gained over the years of shows, movies and photos and another pc full photos which would suck to lose everything.  I want a backup nas that only wakes on lan so the hard drives aren't continuously spinning.
