yes its called a fan splitter and you can get 3 or 4 pin ones

This is going to be a stupid question.

 

So I'm buying a new fan, but my motherboard has only got three fan connectors (I currently have three fans) + two CPU fan connectors (main and optional).

Is there any adaptor that splits a single 4-pin connector into two other 4-pin / 3-pin connectors? Or do I have to buy some sort of fan controller?

You could buy a fan controller but there is a splitter for two fans into one header. I do not know about the other way around. There probably is though because there is an adapter for everything now. The fan controller you could buy for like 30 bucks on amazon.
