And if so, how similar does the Xeon Phi compare to the Titan X>??

No, it is not like a GPU. It does compute tasks, but it's set up differently and they're not made for rendering graphics compared to a GPU. They don't even have video outputs.

Kind of, yes. Much like a GPU in certain situations, it can be used to perform compute workloads to alleviate the CPU.

So are these "enterprise" CPU's more of your bitcoin mining chips??? and your typical folding chip??? (by typical I mean the best and over kill for that)

In a very broad sense yes, a GPU is an example of a co-processor. However, when people use the term they're usually referring to things other than GPUs.

And a general question, in a custom build, lets say I have multiple graphics cards that are NOT configured for SLI/Crossfire, will they perform like individual cards and output the same video stuff but 3 times??? will this work with two different GPU's??? or will it just not turn on???

They aren't really good at Bitcoin mining and AFAIK, Folding@home doesn't support Xeon Phi.

They will act as their own entity, but they will have the capability of outputting discrete video feeds, but they can also mirror displays as well. As far as working with different GPUs, are you referring to the Phi?
