In a couple of weeks i am going to build an new pc(saving a bit more money before i buy everything) but what about office? Do i need office 365 or can i go with an older version as well?

Office 15 which is 2013, or you could just go with Open Office. In my opinion Office 365 really isn't worth it, but then again I just get a volume license.

Office 2016 is released.

You'll be getting that if you get Office 365 subscription.

If you have Office purchased in full, no mater the version: 2013, 2010, 2007, heck even Office XP, they will all work no problem with your new system.

The exception is if you bought it with a manufacture computer. Like for example, you bough Office with a Dell/HP/Acer/etc computer. That you can't transfer. That is because you paid a low price to have it.
