Just wanna keep this quick, are there any performance benefits of using a xeon chip (which may be lower priced, but have more cores) over a consumer chip (such as the i5-4690k or i7 5820k)?

Usualy Xeons feature a little bit more cache whitch may help depending on applications you tend to use. Usualy something like Xeon E3 1231 V3 is basicaly just i7 without the integrated GPU for a lot lower price. (and it supports ECC memmory)
