Most games don't need more than 4-6GB, but it doesn't matter if it isn't used.

This is not really true, i have 3 1080p screens and a GTX 970, i run GTA V at max settings (on one monitor) just fine

Not really. Using added monitors only decreases performance by like .1fps in most games. Unless of course you are running yotuube or twitch on a different monitor.

it only works well on certain games, otherwise FOV and aspect ratio gets destroyed

Yeah it's kind of hard to use 2 monitors for something lik eyefinity or surround, generally you need 3 monitors or more lol. Regardless, I'm pretty sure that's not what he meant for his question.
