Is it normal for touchscreens to go bananas on phones when condensation starts appearing on them, or any other liquid, rendering them unusable?

Yes it is. Sony smartphones work when wet.

Funny thing is, my Xperia SP starts going crazy as soon as it gets transferred from warm to cold.

Only new ones. Z3+ was the first one to have this wet touchscreen function.
