Valley, Haven, 3DMark, and then FurMark (in that order).

 

Somehow, my 3450 survived all this with a good OC on core and mem.  :o

I crack an egg on the GPU and if it doesn't cook then I call it stable. The GTX 480 days I would use cake mix in one of those ez-bake pans.

MSI AFTERBUNNY + KOMBUTTSTER (afterburner/kombustor :P)

 

and gaming skyrim custom modded / bf4 ect ( all games can be stable for me but skyrim crashes after a while ;x , coz it fully stresses the vram :D )

Valley and Heaven, then the most GPU intensive games I have in the most GPU demanding environments. If it can play the games I have, then it's stable.
