Hey, I am a student living in Australia, and I have an Intel Nuc M15 for work and an Xbox Series S to satisfy my gaming needs. However, I wanted to return to PC gaming after selling my rig in '21. 

I want to use my MSI 27G4F (1080p, 180Hz) as a display output, and I could use a 1 TB SSD from Kioxia, but it is just a bulk disk for games and other storage.

 

I stayed away from Thunderbolt 3/4 EGPU options due to costs, compatibility concerns, or just a waste of money. Could you help me curate a budgeted option where I can upgrade some things down the line?

My budget is around 1250 AUD all-inclusive build 

I want to play some Horizon Zero Dawn, God of War, Red Dead Redemption 2, Spiderman Remastered, and other Steam and Epic backlogs I bought over the years, preparing for GTA VI. I want another 1TB SSD to drive the OS, main games, and apps. All-inclusive means that the tower has to include everything but the OS

Tried to stay within the budget constraints of the Australian "Dollerydoos", not an easy task. I recommend you go to eBay for your GPU as your money will go farther there compared to new:

Here I was able to fit in an RX 6800 for the price of a new 6750 XT. Basically, over a 10% performance bump if you're not bothered by buying used. The 6800 is also on par with a 7700 XT.
