So a Let's Player I watch said the he doesn't use v-sync or g-sync or the like because he v-syncs the video, so if tearing occurs during his game, it won't appear on the video. I tried looking up more info on this but I haven't been able to find anything. Anyone know how this would work?

Tearing is created by the monitor. The GPU and the rest of the computer (and therefore any recording software) has no record of any tearing, so it will never show up in any recording. Once video content is rendered it's at a constant framerate anyway, so no tearing is possible there.
