Cards with the same graphics chips (check here: http://linustechtips.com/main/topic/222806-what-rx-200-series-card-is-what-7000-series-card/) and same amount of VRAM.

If they have different speeds (memory or whatever) the faster card will just copy the speeds of the slower card.

R9 380: together with another R9 380 or R9 285. There are no 4GB R9 285 cards, but there are 4GB R9 380 cards. Keep that in mind.

R9 290 or R9 390: together with another R9 290 or together with an R9 390. Be sure you have the same VRAM amounts.

Well you get two things on fire and then cross them and Bam crossfireTM

With the new drivers AMD made it possible to crossfire last gen cards with current gen cards, so 290 and 390 should be able to crossfire but not 380 with 290 or 390 I think.

You can? Oh, I didn't know you could do that.. I thought because they are different graphics chips..

They're the same core (Hawaii for 290/x and 390/x, the non X uses Hawaii PRO GPU while the X version uses Hawaii XT).

While matching cards are required for nVidia SLI, I recall reading that Crossfire isn't that demanding, allowing you to mix and match cards. Unsure about them needing to have the same amount of VRAM (although it would make sense)

Doesnt need to have the same amount, but if you have 4GB + 2GB for exemple, you will have 2+2GB.

so basically the lowest amount of VRAM you have is the amount of VRAM the crossfire will use. Good to know.

I'm curious if I can use an old nVidia card as a PhysX card alongside my 270x.

I haven't personally tested it or know anyone who has, but I heard they first didn't enable this but later they did:
