I'm planning to buy 1 gtx 970 and gaming with 1080p with 3 monitor. Do you think that that GPu can keep up with it?

Depends on the game you're playing. Most racing games will do just fine.

For 3 monitors a R9 390 or 390x would be a better choice.

As stated above be willing to tweak settings.

The cumulative resolution would be not as high as 4K but it's still well above 1440p.

Go for R9 390 if you have a good psu.

Gaming on 1 of the 3 monitors yes. On all 3 of the monitors no. 

Either that or the 390. The choice is yours.
