Does it make more sense to say spend £100 on a headphones or does it make more sense to split that money and purchase a soundcard and a cheaper pair of headphones.

Headphones first.  If your headphones don't get loud enough you can get a special amp, otherwise your onboard is fine unless you get high impedance headphones.  Headsets are not high impedance by any stretch.

I would go with the headset and get a soundcard later because you cannot really get a good £50 headset

Usually high end headsets include a usb sound card which shouldn't be that bad imo.

There is no such thing as a high-end headset really, at least I don't know of any. The 7Hs would be the best, though.

Now if we are talking headphones that is a different story.

Get headphones first, save for a soundcard. The lowest end "good" headphones you want would be something like the ATH-M50, and until that point you won't really have a set of headphones good enough to REQUIRE a soundcard (not that having one wouldn't help). Really whatever soundcard you get would be good enough. Even if its a cheap 50 dollar soundcard. the problem would be the amp (or lack there-of). I just got my Schiit Magni in the mail and love it. My friend has the Bravo Audio v2, payed 30 dollars for it, and it works LOVELY. So just some ideas.
