So I have 2 500GB Samsung SSDs from the newegg sale. One of them is in my new laptop, and the other is in the package. Should I take out the 256GB SSD from my desktop and install it in the laptop, and use both new 500GB drives in my main gaming desktop?

If so, what are the benefits of RAID 0, how likely is it that I will loose all my data, how easy would it be to access the contents of the drives on another computer, and would it just be easier and better to keep them separate?

RAID 0 is designed for increased throughput. Divide 100% by x(number of drives) and that's how much of the data each drive will hold. Because the data is all broken up, if one drive fails, all data is now corrupted and useless. You should probably keep a backup of your data in case one of the drives happens to fail.

I only back up important files like photos/videos on multiple devices, this machine would be mostly used for games and some productivity software.

As long as you back up your data frequently a 1TB raid 0 should be fine and really fast

The point is to eliminate hard drives from my system, but if I did have very important information I would have a separate NAS.

Wouldn't bother... I'd just use the 500 and 256 in the PC for extra fast storage.. Extra games and such.

Sounds good, It would be easiest to just do that.
