I can't find any of these settings in the verizon router. It'd be really nice if they let us use our own, it would make this so much easier.

 

No reason you can't use your own. You can ask them to turn off the router portion and have it act in what's called "bridged" mode. Or, pick up a Motorola Surfboard for like $60.

Alright, so my issue is, when im connected to my Verizon LTE home broadband through ethernet, i can see only a few servers but i cant connect to them, but if my friend is playing and i join their game, it works fine. Now, if i'm on wireless i can see a little more and can connect to which ever one i want, but now i have horrible lag issues and i can't connect to the item server. Any ideas? I've tried to open ports but that never ends well. Thanks in advance.

Do you have dynamic IP? Remove modem, give it a few minutes then plug it back in and hope your public IP changes xD My ISP here is like that, there are bad public IPs and there are good ones. I couldn't play CS:GO and TF2 yesterday until I changed my public IP. Try it, won't hurt, maybe it'd work for you.
