I feel like I should know this but I've noticed that a lot of people recommend ac standard routers which only do 5GHz connection and I was wondering if phones, laptops, tablets commonly support 5GHz connection? Would I have an issue with that?

Really depends on what models doesn't it?  Most phones since the release of the HTC One M7 (and those in that generation) support AC 5GHz out of the box.  Also the vast majority of routers out there that do 5GHz AC also support dual band, having 2.4GHz SSIDs broadcast as well.

Newer devices mostly support 5GHz connection. But if they don't it's not a big deal, as you can just use 2.4GHz, hence why these routers are called "dual-band", they work with both newer 5GHz devices and older/lower-end 2.4GHz devices.
