I'm deciding to get into water cooling and I have a question:

 

If my CPU block is Nickel + Acetal and my radiators are copper will it increase corrosion? 

 

That's not a problem, galvanic corrosion occurs with dissimilar metals such as copper and aluminum in the same loop. There are also fluids that work with dissimilar metals but nothing you need to be concerned about.

Don't buy a GTX 980, it's overpriced! Buy 2 GTX 970s or 2 R9 290s intstead (the R9 290s would even be cheaper)

Nope, most CPU blocks are Nickel plated Copper.
