Windows Embedded 8.1 Industry Pro as a daily driver?

So I have my laptop here (metabox wa50sj), and I chose it to come without an OS, because it is way cheaper, and I can do it myself.

 

My question is, can I use Windows Embedded 8.1 Industry Pro with Update as a daily driver? I get it for free with my school.

 

Things that I will be doing is: MS Office, autodesk inventor, some video/photo editing and some gaming.

Looks fine to me, as long as it runs `ExE programs (which i think it just does....)

From what I can tell, it is just normal, but without the useless windows 8.1 apps, only IE, and windows explorer and something else I think

I want that. I have a bloat filled HP install on my laptop. It would have been so nice not to have to uninstall everything.
