Yes you can, just make sure to put the sticks in the right dimms. (labelled DDR3_1 and DDR3_2 on the mobo or something close to that) I am running 3 sticks fine ein my x79 mobo. Maybe if you do memory intensive application the CPU may not be able to deliver full performance ?

Im just wondering if you can use 2 DIMMS on an X79 motherboard? Will it have any drawbacks other than having less ram?

Yeah, because I was watching one of Linus's unboxing videos a few days ago, then he said quad channel uses 4 or 8 DIMMs.

4 or 8 physical slots on the motherboard but you can still use only one dimm.

as correct. The correct dimms (as I said they are labbeled on the motherboard near the slots and they are probably indicated in your motherboard's manual)
