I have a 500W PSU with 2x (6+2 cables) so it can support a card with 2x 8 pins connectors, you dont need a PSU you've selected there's no point

True that helps a lot

if i run a 500w Psu will i have issues when i want to start overclocking and running SLI?

It would be a you might be able to overclock it stably on 500 W if its a gold or higher, as for SLI the minimum wattage for SLI at stock voltages is 483 W but I would suggest 600 if neither are overclocked and about 700 if you want to do them both
