Going for XEON processor is good choice or should I stick with traditional way of using i5 ?

For editing a Xeon is better than an i5 as it has the performance of an i7 at the cost of an i5. Although, if you're not going to game at all, then it might be better to go with a 4790k instead and don't get a gpu. (With a Xeon E3 you'd need a gpu)

Yes, I am currently running a Xeon E3 1231v3 on a Gigabyte GA-H81M-DS2V. Didn't even need to update the BIOS since it came to me with the F5 BIOS supporting all Haswell Refresh CPUs. But an older H81 board would need a BIOS flash. Even with the oldest BIOS I could have used the original Haswell Xeon E3 1230v3 though.

I just ran Cinebench on my Xeon E3-1231v3 and the CPU score was 736. I think i5's tend to be in the mid 500s or so at stock speeds and the high 600s with big overclocks.

 

I don't do any video editing though; I bought the CPU strictly for gaming, and it's awesome for it.
