HDMI's max refresh rate is 60Hz right? So what would happen if I use the HDMI out on my GPU? Would I still get tearing?

you would get tearing on 240hz if you framerate is not stable 240.

If your framerate is above your monitor's max refresh rate you will get tearing. HDMI can go up to at least 120Hz but most monitors will only support 60Hz max in the first place.

I understand we get tearing because the gpu renders more frames faster than what the DISPLAY can output. But how exaclty does the interface (hdmi in this case) refresh rate limit come into play?

You can't use displays higher than what HDMI can handle. Otherwise it doesn't come into play.

I mean what happens to those excess frames that the interface cant handle?
