I'm using a single cable that has two 6 pin connectors and I'm plugging both into the card. Is it safe to OC with this or should I get a second cable?

It should be fine as long as your power supply is from a good brand my 780 can overclock like a beast with one cable

eg Corsair, Seasonic NZXT Coolermaster.

Unless we are talking 1500 on the core even then plus one cable will be fine 

 

Otherwise I wouldn't trust it if it's from a unknown brand

Brand means next to nothing. OEM is what matters.
