which way should i overclock?

Should i overclock my GPUs with my UEFI BIOS or with MSI Afterburner? I got Asus Maximus VII Hero and Nvidia GeForce GTX 970 in 2-way SLI.

you can't overclock a GPU using your Mobo BIOS.

 

Use MSI Afterburner or Precision X for GPUs

If you're referring to VGA hotwire, that feature is intended to make it easy for you to control your cards after modding them - like soldering on more components for more power dellivery and all that. 

 

Assuming you're not doing that (which you probably aren't), you should use software like precision, or afterburner.
