Good looking build, considering it is a Mini ITX there is not a whole lot of room for expansion so a smaller power supply would suffice. 

 

500w would give ample overclocking room. Unless you have a particular reason to go all the way to 750w.

What power supply would you recommend? I'm not too up to date on Mini ITX builds

You could go for the same power supply, just a smaller one: http://uk.pcpartpicker.com/part/corsair-power-supply-cx500m

 

Only shaves a little bit of money off. As long as you don't feel that you would have the use for extra power in the future.

He could, but he would be putting the PSU on a higher load-percentage = more heat = higher noise. Also the PSUs usually have a higher efficiency at about 50% load. Really depends on the PSU though, but around that it is always good.

Also something to consider is that you usually keep a PSU quite some time and 750W could be moved to a bigger system and is crossfire ready.

Future-proofing is hard, but with something like that you can do it.

 

EDIT: You could look for a 80+ gold certified PSU though. That would be a much better option overall.

There's little point getting an i7 just for gaming when an i5 performs similarly while being much cheaper.

Why an aftermarket cooler if you're not going to oc? Why 16GB ram? 8GB is already plenty for gaming.

The psu is overkill. A decent 500w is already plenty.

An i7 would also be outdated for gaming by the time an i5 is.

We're barely moving towards 12GB ram as the sweet spot. For gaming, it'll be a few years before more than 8GB is needed.
