Question about Ultrawide monitors

So I'm thinking of getting one of those 34" 3440x1440 monitors that Linus seems to looove to no end next spring. One thing concerns me though:

How does that actually work? Does the monitor automatically adjust the proper resolution and aspect ratio in games that don't support the full 3440x1440 resolution? And is this feature only on LGs monitors? I'm most likely going to get the Samsung S34E790C when it's released if it gets good reviews.
