Water Cooled mIni ITX vs Air Cooled mATX

I used to have the Prodigy M and with a big tower cooler and aftermarket GPU cooler, all on air, you can go silent with this rig and it would be cheaper than watercooling. I would love watercooling myself, but for a LAN-rig, second rig, the way you explain it I would not spend that money. But that's just me.

I'm building a htpc/LAN rig/spare pc in the prodigy or prodigy m and I don't know wether to go with a water cooled mini itx system in the prodigy with an asus animus vi impact or an air cooled matx system in the prodigy m with an asus maximus vi gene, it would be nice to have sli :D

Could I mount a 120 in the front, 120 in the back and a 120 in the top without removing the 5.25 bay?
