Would a casual user/gamer/ common listener to music such as myself be able to definitely hear the sound differences between a 518 and a 558 or a 518 and a m40x?

Well, they have different sound signatures, so yes. (m40x is more bass heavy for example)

Between 518 and 558, maybe, would depend on yourself as an individual as well as what you plug it into. Between a 518 and M40x though you will notice a difference.
