Ive been out of the building game for a while, still rocking my old x58 based system with my 560ti.

But in perperation for building my new system I wanted to know should i use the single cable with a 6 pin and a 6+2 pin to power my gpu, or should use  2 seperate 6 pin cables?  Does it even matter on single rail psu's?

Thanks

Those extra 2 pins are supplemental, so you can use a 6 and 6+2. If you don't need the extra two pins, then they will hang there unused.

Would it be ok if i ran two 6 pins cables?

You can use two 6 pin, but if the graphics card require 6 and 6+2, then you must use the supplied 6+2.
