This is probably going to sound like a stupid question but will sli help performance and frame rate on a single monitor setup?

Yes, but whether it will be worth the upgrade depends on what cards you are running, what your monitor's refresh rate/resolution is, etc. There a lot of variables that you must take in to account before going the SLI/Crossfire route though.

Generally you'll always see improvements when SLI'ing two cards, it's when you go beyond 2 cards you'll start to see scaling issues.

I'm assuming 1920x1080 / 60Hz
