It depends, is this your only storage computer? I personally would go with the 500GB SSD, but I also have a home server with 12TB of storage. If this is going to be your primary storage location, I would go with the 2nd option.

Option 2. The only benefit an SSD will give with gaming is loading times. It will provide some performance boost in editing, but not enough of an improvement to offset the capacity loss.

I'd go 250GB SSD and 1TB-2TB HDD.

Option 2. You can pick up a Samsung EVO 840 250GB, or Crucial MX100 250GB, and pair it with a 1TB WD Caviar Blue, and you got yourself a nice combo. That's what I personally have, Samsung 840 EVO 250GB + WD Black 1TB, and it's great.
