Because real life objects can blur when they move compared to virtual images...which really can't.

Are you talking about 60FPS game streams or pure video streams? If games then it's likely because your GPU/s micro stutters a lot making it look very unsmooth.

Because of video smoothing. The way video is displayed is different to how in-game is rendered.

if you try streaming with Steam's in-home streaming from one computer to another, it looks really (really!) smooth on the receiving end.
