I should probably break the news that you can only fit a gpu with a height (or width depending on perspective) of 120mm max (maybe a few mm more).

Any GPU with high-profile pipes or just very wide/tall is not going to fit.

I'm going SLI 970s and I had to choose EVGA since they only have 112mm (4.376") cards, I will be getting the one with a blower cooler for better airflow.

Therefore a reference 980, like in build 2, or EVGA 970 seems to be the only options.

I would elect to do a modification of the build 1 with a smaller gpu in terms of height.

I would suggest this build, however you should change the parts to fit the colour scheme that you decide on.

The PSU is upgraded as it will give you headroom for potential SLI down the line, but perhaps 650 is sufficient due low TDP on the 970s)

I may sound like a total pillock here, you mean the gigabyte gtx 970 G1 is to tall/wide for the case?

EVGA Supernova 650W G1 for PSU.

heard the h440 has airflow problems or something. Check out the enthoo cases (section off psu !) pro, luxe, evolv and the NZXT Source 340.

Are USB 3.0 PORTS backwards compatible with USB 2.0 DEVICES? It's just i'm playing about with a ATX build and the motherboard only has 3.0 ports...

Yes.
