As far as the GPU memory, what resolution are you planning on running your system? From benchmarks, the only game that uses more than 2GB of video memory was Crysis 2 at 5760x1080.

If I was going to buy a 680, I would opt for an MSI Lightning edition because of the OC ability and the backplate.

Current Rig:

Phenom II x2 550 @ 3.7GHz stock volts

Corsair A70

ASUS M4N75TD

WD 500GB Black Drive

WD 1TB Blue Drive

XFX GTS 250 at stock settings

XFX 650W XXX edition PSU

OCZ BE 4GB @ 1600MHz 9-9-9-24 1.5v

Mushkin Radioactive 8GB @ 1600 9-9-9-24 1.5v

Cooler Master CM690II Advanced edition

if you dont know this "OC ability" has nothing over anything, except for the lightning is a guaranteed overclock. back when the 600 series were just released, msi pe cards, 680 lightning and the evga 680 classified were able to overvolt and achieve higher over clocks. but now since nvidia laid down the law (greenlight), nvidia told msi to take off the feature of over volting and told evga to take off evbot port. and also my 1440p monitor uses 2200mb of vram to run far cry 3 at ultra settings.

I'd go for crossfire 7970's as they are currently the fastest and AMD's triple monitor setup works better than nvidias to the best of my knowledge.

possibly this one.

only the ghz edition is the fastest, regular 7970 is equal to the 670 in most cases.
the regular versions are the same chip, out of the box they may be slower but you can overclock them in 2 seconds to the ghz edition frequencies, unless im mistaken

you can overclock 680's too, out of the box 680s are faster than the regular 7970's
didn't Nvidia "greenlight" their cards to prevent over-volting thus limiting their overclocking potential.
