Not at all. The SLI is only to make them work together on a single process (such as gaming). My friend is running 2 cards not in SLI right now to power 5 monitors :P.

Im doing a school project where I need to put up to 8 or more monitors on one computer. I need to show off artwork that people in my school have made. My problem is that I don't want to spend so much money for 3 or more graphics cards. I've seen businesses use just one computer to power up to five monitors without needing a really big computer. If anyone knows a piece of hardware that is capable of this i'd really appreciate it.

As long as it doesn't involve 3D rendering then you can have really basic cards do this by using display-port hubs.

Buy loads of GT 720's, they are dirt cheap and can support 3 monitors each. As long as you have at least three PCIe slots on your motherboard you can have nine monitors.
