Most versions of linux in my opinion. I would recommend Ubuntu, or Elementary OS. Linux take a bit to get used to after using Windows for a while, but once you pick it up. You may find that you like the feel and work flow better then Windows. At least I liked it better, it was just the lack of game and application support that drove me away. With your select few applications that need to run. It will be perfect you.

Arch Linux, but it's for an advanced user. You build it up from the ground up with only what you need. Base install gives you no GUI.

Of the more common distributions, Linux Mint is fairly lightweight. Lubuntu and Xubuntu are two Ubuntu-based distributions with lightweight desktop environments.
