A 780 Ti is faster than a 290x but two 280x's will be faster than both the 780 Ti and the 290x.

So for the best gaming performance should i go with 1x gtx 780 ti? (approx 600 euro)

or 2x MSI r9 280x Gaming 6gb ?

or 1x high end 290x card?

The two 280x will be killer. Go for those. Make sure you have enough fans/good airflow in your case because those cards will be around 90 degrees celsius.
