Is there a way to stream via Steams in-home sharing to a computer with a higher resolution?

I have a rMBP with a 2880x1800 screen and I wanted to stream from my computer with a 1920x1200 screen. I just tried it and I couldn't go higher than 1920x1200, but is there some workaround to it?

force your computer to output to the resolution you want with custom resolutions. I believe you can find out in the guide in how to downsample

Downsampling?

Yup, that's your best option.

Could I actually just disconnect the monitor and therefore remove the 1920x1200 cap?

Edit: For the record, it doesn't work. It reverts to 640x480.
