I don't think Eyefinity/NVSurround support 8...

 

Perhaps not for gaming, but just having 8 monitors for multimasking/monitoring... It might work.

You can still output to eight monitors if you have the ports though. Windows will detect it. All you have to so is move them around in the screen resolution window to get them in the right places.

It honestly depends on what graphics card you are using.  Some will only support 4, but others can support more.  

 

If it has a displayport 1.2 connection, that will support three monitors out by just that one connection.  However, you will need to buy an active adapter to do so.  
 

I would love to help you more, but we really need to know more information like how you want to have it set up what, if any monitor(s) will be used for gaming, and how much aesethetis mean to you because you could get away with using some good card for gaming and a cheap card(s) for extra monitors.  I used the HD5450, which is only 30 bucks, for my surround gaming rig.  Although, it was a bit touchy because I had to enable and disable that card every time I restarted because Nvidia and AMD don't like playing nice. This won't be an issue if you use all the same brand, though. (All AMD or all Nvidia)
