A fast response time will reduce motion blur of fast moving objects, but I think what you are thinking of is input lag, the delay between pressing a control and seeing the action register on the screen.  This spec is unrelated to response time and is usually not listed anywhere unfortunately.  That being said, in general most monitors have much much lower input lag than TVs.

 

As far as actual response time goes, plasma TVs are superior to LCD technology in that aspect and don't produce much motion blur, so there's probably not much improvement to be had by switching to a fast 1ms LCD, although that may vary depending on the TV you are coming from.

Plasmas have a very low response time - as in the time it takes for the pixels to change colour or turn on / off. It's almost non-existant far superior to anything an LCD screen can achieve.

 

Like Glenwing mentioned, the input lag is probably better on your new monitor. Plasmas (and other TVs) tend to not be designed with that as a priority as it really doesn't matter when you're just watching TV shows or Movies.
