So I bought the Corsair rm850x 2024 variant which doesnt have the 1x 12V-2x6 to Dual 8-pin (6+2) Cable. Ive got an AMD video card which utilises that cable so what should I do?

Use the normal 8pin cable ?

Thats the correct ones to use with AMD GPU's

The 1x 12V-2x6 is only for RTX 4000 and 5000 from Nvidia.

 

You got all the cables needed to make your AMD GPU work.

You also picked a fantastic PSU for your build!  I got an RM1000x 2024 model myself.

I personally only use the RMx series from Corsair, probably used over 200 of them so far.
