Budget (including currency): TBD

Country: USA

Games, programs or workloads that it will be used for: generally just wanna be able to run triple AAA games

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): no peripherals needed, would buy relatively soon, wanna play at 1440p 180hz (will buy monitor later)

I am thinking of buying a ryzen 7 5700x3d, what would a good (not horribly expensive) GPU be to pair with it?

right now I'm thinking from an rx 6800 to an rx 7900 GRE (just depends on budget and pricing)

If you already have an AM4 platform, then 5700x3d is a decent upgrade. But if your going to get a motherboard too, it's not as 7600 is probably equal or better than 5700x3d for gaming, in general. Specially that you will be playing at 1440p resolution, which will be more GPU intensive and the importance for CPU diminishes a bit. But you might also want to wait a bit until the release of the next ryzen gen. Even if you don't want the latest, it should lower the price of the current and older gen.

Alternatively, you can just use included cooler or get a better motherboard at $150 range. Or get a mesh front case that's around $50-70 from like montech or other case that has at least 4 fans included.

For the 5700 X3D, I would suggest as the most expensive option the 4070 super which is a great card for the 5700 X3D if your willing to spend a bit of money. For AMD, I would suggest the 7800 XT which costs less at $500 compared to $550 but has slightly worse performance. For a cheaper option for the 5700X3D I would suggest the 3060 Ti which you can find for around $380 or the 7700xt for $400 which would offer more performance than the 3060 Ti with about 10-15 more FPS in all resolutions according to this video. All of them are good options and if you are planning on using stuff like Ray Tracing and DLSS more often go with Nvidia or if you want more performance for your dollar go with AMD. Although if you don't know how to update BIOS, I would go with a different CPU maybe.

What would be a range of good GPUs to go with the 5700x3d?

Then that's a good choice. For the GPU, at 1440p and 4k, get the highest you can afford on either AMD and Nvidia. Or at minimum, likely either 7800xt/7900 GRE or a 4070s or higher. As it seems that mid-high range gpus has the most value if performance per dollar is concern. Also, if you only play AAA titles, why are you going for 1440p 180hz monitor? If the price are almost the same, why not a 4k 120-144hz? I'm asking this due to two reasons. First, you don't really need high fps on single player AAA titles. Second, the higher the resolution, the less stress and bottleneck the cpu will get. Meaning, if you can afford it, you can probably even pair a 4090 with a 5700x3d at 4k and get little to no bottleneck. Also don't get 8-10gb vram cards if you plan on playing AAA games at 1440p. Specially for those AAA titles that are still in development. It seems the trend of new titles requiring more vram isn't stopping, regardless if it's due to poor optimization or coding. I mean those games that perform better with more vram, aren't really that graphically or visually  different compare to other games that don't. So if are thinking of keeping your gpu for the next 3-5yrs or more, better get 12-16gb vram cards at least.

I also play esports shooters and lower spec games, which I would want to run at a high frame rate because they would be able to. the AAA games wouldn't run at 165fps on 1440p or at 120fps at 4k.
