Upgrading my ram and have a question

I want to go from 32gb to 64gb, and I'd like to just buy a new pack of ram since my CPU Cooler is blocking a slot. Plus the cost isn't that different and it'd be nice to have some spare ram. I'm looking at Corsair VENGEANCE LPX DDR4 64GB (2x32GB) 3200MHz CL16 Intel XMP 2.0 Computer Memory - Black (CMK64GX4M2E3200C16) either the 3200mhz CL16 or 3600mhz CL18.

Which would be better for gaming, docker, VMs, etc.? 3200mhz CL16 or 3600mhz CL18? I'm a programmer, so I use a lot of docker containers and VMs... Plus Jetbrains products, which are memory hungry

What cooler? Both rams technically go same speed, but CL latency is nice for gaming, alternatively you could try to push the OC of the 3200Mhz ram if it's capable, anything over 3600Mhz can be unstable though, so that's pretty much the max

PC:

Ryzen 5 5600 |16GB DDR4 3200Mhz | B450 | GTX 1080 ti

PCs I used before:

Pentium G4500 | 4GB/8GB DDR4 2133Mhz | H110 | GTX 1050

Ryzen 3 1200 3,5Ghz / OC:4Ghz | 8GB DDR4 2133Mhz / 16GB 3200Mhz | B450 | GTX 1050

Ryzen 3 1200 3,5Ghz | 16GB 3200Mhz | B450 | GTX 1080 ti

be quiet! Dark Rock Pro 4 50.5 CFM CPU Cooler is the cooler I use, and thank you - I think I'm going to go with the CL16 and try to OC the ram

if the fans are attached by clips, and are the only thing blocking the RAM slots, you could try raising the blocking fan a bit higher if it fits in the case

3600 CL18 is overall a bit faster technically, though good luck actually noticing a difference between the two. Realistically I'd just get whatever is cheaper, and as said above, you can always give overclocking it to 3600 CL18 a shot if you want to, though given this is a workstation I would try and avoid that if you can (64GB of RAM takes forever to properly stress test, and for a system that you use to make money, a day out of commission running a memory stress test is not usually worthwhile, and possibly having the system not be 100% stable will lead to a blue screen at at the point when you hadn't saved your work in over 4 hours according to Murphy's law).
