Looking for a good option for mobile internet

I'm about to start OTR truck driving, and I'm going to take my Steam Deck with me, until I can afford a more customizable, powerful, and more capable gaming machine that's also mobile (I'm thinking about getting a Minisforum mini PC and going from there).

 

So, I'm absolutely not happy to tether to my phone and use that, I really don't think that's smart, elegant, or really usable, plus, I only have 10gb/month of tether data.

 

What I am looking for is a Wireless Access Point, especially one with an Ethernet option, instead of just USB or WiFi. I have Verizon for my phone, could I just add another line, get a WAP, get a SIM card, pop an ethernet cable from the WAP into my steam deck, and just go? I'm also planning on doing work based stuff, reports or whatever, via my Steam Deck, and the trucks don't come with WiFi.

 

I'm not sure if I would even consider StarLink, Musk can suck it. 3:<

 

Suggestions? Especially form someone that has done OTR or van life, would be awesome, thanks.
