I play at 1440p resolution and This is my current setup

CPU: Intel LGA1151 Core I5-8600K OEM

CPU Cooler: Noctua NH-U9S 46.44 CFM

Motherboard: ASUS LGA1151 TUF z370- PLUS GAMING

Ram: Ballistix LT DDR4 2666MHz 16GB DIMM 2x8

GPU: Asus ROG Strix GeForce RTX 3070 OC 8GB

SSD: Samsung PM961 SSD 256GB PCIe M.2 KPC

Harddrive: PC PROD Seagate Barracuda 1TB Sata3.0

Power Supply: Corsair RMx Series™ RM850x — 850 Watt 80 PLUS®

 

I am planning on upgrading the SSD and the CPU. I have been scavenging for info as to which would be the most suitable upgrade. 

This is what I have been thinking 

Intel Core i5-13600K 3.5 GHz 14-Core Processor

Asus TUF GAMING B660M-PLUS D4 Micro ATX LGA1700 Motherboard

Crucial P5 Plus 2 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive

 

I am just wondering if those are good options to upgrade or if are there any better or more compatible options.

Those are good.

 

But how about Ryzen?

7800X3D would probably be the best CPU for Simulator games.

Time to move to 32gb and DDR5. Get Ryzen 7800x3d instead.

Lose the HDD but make sure Windows hasn't installed anything on it, removing it may remove the ability to boot.  I have this on one of mine.

 

I agree the 7800X3d is the best choice here but may not bewithin budget in your region.

 

13600K isn't a bad choice at all, it's been arguably a top 5 gaming chip for a bit.

If other simulator games are anything like MSFS is then you have to go for the AMD 3D CPU's. 7800X3D is best option right now.
