Hi, this is my final build after doing a lot of research. Still feel like i am doing something wrong so i need an expert opinion to give me the green light or something. 
I wanna know if my particular set of pc parts are okay for AAA gaming without ray tracing, some VTube studio streaming with games running in the background. Some Nvidia broadcaster and light video editing for youtube and twitch. 

please do not worry about my storage and display, for now ill use the ones i have and i wont buy it. 
(offtopic) my all time fear is to spend the money and then realise that its not good enough for what i want to do.

I personally think that board MAY be a bit overkill for your cpu and gpu, though i do not know intel board that well. if this was an amd build i would tell you to get a b series board instead of an x series, im sure intel has an equivalent though i can not think of what it is.

well you and (another person below your comment) said it would be better to go a 13th-14th gen, so i did that, especially since the 14th generation was within my budget. 
I would be okay with 12 gb graphics card, but knowing how hogwarts takes around 11gb of vram, i decided to have a 16gb vram even if it meant its a 4060. Currently 4080 - 16gb is out of my budget. I would ideally wanna use both Vtube studio which takes around 4gb vram and the games i wanna play. So running hogwarts and vtube studio would take almost 16gb of vram. (11+4= 15gb)

That cooler is NOT going to handle that cpu. I would look at a locked i7 paired with a B760 board along with a dual tower cpu cooler.

Even if i make it 2x 8 gb = 16 gb total. I wouldnt have nearly enough to have a 14th gen core i7. Prices are too much. 
so i am stuck with 14th gen core i5, which i heard is the sweet spot for gamers.

Maybe 8GB VRAM is enough but still I would prefer atleast 12GB VRAM.
You can see what happens when you run out of VRAM at 8:45
