If I buy an amd cpu from Amazon will I still get starfield?

Depends on the CPU, though every Ryzen 7000 series chip I'm aware of comes with a version of the game (the Ryzen 9s come with the premium edition, everything else comes with the standard edition).

If the deal doesn't say it's bundled with Starfield then you likely won't get it with the purchase.

How about a 5800x or a 6750xt from newegg

6750 XT should, the 5800X likely won't. What's the product page you're looking at for each of them, it should say if Starfield is included or not.
